Ingredients

  • 2 cups fresh young coconut meat, sliced thin
  • 1 medium ripe tomato, cubed
  • 1/2 cup mango, diced
  • 1/4 red onion, minced
  • 1 Tbsp. of fennel bulb, minced
  • 1 fresh red chilli, de-seeded and minced
  • 1/2 cup fresh cilantro, minced
  • 1/2 cup fresh parsley, minced
  • 1 tsp. himalayan salt or to taste
  • 1 lime, juiced

Directions

  1. Combine all ingredients in a large mixing bowl. Let marinade for 2 hours or overnight.
  2. Serve with raw tortilla chips or crackers.
