Ingredients

  • Veggie scraps from onions, celery, zucchini, broccoli stalks, cabbage
  • 3-4 cloves garlic, unpeeled
  • 3-4 Tbsp. Chopped ginger
  • 1-2 tsp. mineral salt
  • 1 Tbsp. oil of choice
  • 1 bunch of Rosemary, thyme or oregano sprigs

Directions

  1. In a large stock pot, add all scraps and ingredients. Fill with water, about 3/4 full.
  2. Bring to a boil, and simmer on low-medium for 1-2 hours.
  3. Let cool and transfer to large glass jars, label and store in the fridge. Use as liquid in dressings, stews or soups!
