Course OverviewOur Plant-Based Low Carb Chef Certification is a blend of nutritional science and hands-on culinary arts taught by Elaina Love, Kate Lahusen, and dedicated certified Instructors. Immerse yourself in the healing power of holistic nutrition and cutting-edge culinary arts. You will learn the building blocks of optimal health, how to heal and nourish your body using low carb, plant-based, gourmet foods. This course differs from our Raw Chef Certification as it includes Gluten-Free, Low-Carb baking and cooking, cooked/raw 50-50 fusion recipes, gourmet cooked meals featuring grain-free recipes, medicinal elixirs, gourmet coffee elixirs using healing tinctures, gourmet desserts, sugar-free chocolates and plenty more.
All levels welcome. This is our foundational course perfect for the beginner home chef to the well-versed chef. Our techniques are unique and cutting edge, applying 20 plus years of experience and adapting those techniques to today’s relevance. Most students participate in all 3 levels but you have the option to participate in Level 1 or come back and join us for your full certification at a later date. Prerequisite: None

Whether you want to advance in your professional culinary career or learn how to create new healthy Plant-Based Low Carb Chef dishes for your family and friends, this program will open your mind to new and exciting ways to prepare food. You will cover beginner to advanced techniques in creating positively delectable dishes, along with the science of flavor balancing and recipe development.
Upon completing our 3-week vegan chef certification, you will have prepared over 200 delicious, nourishing, gluten-free, low-glycemic and family friendly meals. Also included is daily nutrition lessons, Q&A with Elaina Love and talks from expert guests. As you complete Level 3 you will learn how to create your business model, menu planning, learn food photography, and present a live recipe demonstration. You will have an opportunity to practice recipe development during hands-on training, receive constructive feedback from your peers and instructors on your dishes, photography and live presentation. You will also participate in catering a gourmet dinner for community residents.

Level 1: 5-Day Immersion into Plant-Based Cuisine
Monday, June 17th – Friday, June 21st
This course is a blend of theoretical and hands-on training taught by experts in plant-based nutrition. As a graduate, you will have prepared over 50 delicious meals which are nourishing, gluten-free, low-glycemic, suitable for families, diabetic, keto and gluten-free clients alike. You will become versed in the latest nutrition information, including gut and brain health, and tools for optimal living. All levels welcome. Level 2: 5-Day Advanced Concepts in Plant-Based Cuisine
Monday, June 24th – Friday, June 28th
This coursework is a great beginning to prepare for a career in plant-based culinary arts. Tailored to increase your understanding of how food affects the body, you will explore how to create a balanced nutrition plan for your unique body type. We will explore our personal doshas, body type balancing and how eating affects our entire system as a whole. You will learn advanced culinary techniques to increase your repertoire of hearty and healing vegan dishes. Prerequisite: Certification in Level 1
Level 3: Mastery of Plant-Based Cuisine
Monday, July 1st – Friday, July 5th
Level 3 is an advanced chef training focusing on advanced baking and pastry techniques, gourmet desserts (raw and cooked), chocolate making and more. In addition to the excellent teaching and training you will receive throughout the entire course, we have created a way for you to put everything you have learned into hands-on practice in a very special pop-up dinner for our Bend community. Become an expert in catering to a large group and making your recipes explode with flavor! Get inspired, learn ideas on how to start a plant-based food business, and learn the next steps as a nutritional food educator with real nutrition facts. Take your presentation and teaching skills to a whole new level. This course is suitable for vegan chefs, teachers, professional chefs, health professionals or anyone who wants to add more Plant-Based Cuisine to their repertoire. This is for you if you want to make more inspiring, satisfying meals. Prerequisite: Certification in Level 2
- Get real hands-on catering and business experience – During your Level 3 certification, you will be helping Pure Joy Kitchen cater a large dinner. You will also be involved in cafe food production.
- Job placement opportunities. Become certified as a Pure Joy Instructor – apply to intern in order to become one of our instructors or to open your own Pure Joy Culinary Academy Branch.
