Ingredients
- 2 cups fresh young coconut meat, sliced thin
- 1 medium ripe tomato, cubed
- 1/2 cup mango, diced
- 1/4 red onion, minced
- 1 Tbsp. of fennel bulb, minced
- 1 fresh red chilli, de-seeded and minced
- 1/2 cup fresh cilantro, minced
- 1/2 cup fresh parsley, minced
- 1 tsp. himalayan salt or to taste
- 1 lime, juiced

Directions
- Combine all ingredients in a large mixing bowl. Let marinade for 2 hours or overnight.
- Serve with raw tortilla chips or crackers.
