Ingredients
- 2 cups spinach, chopped
- 1 large avocado, diced
- 4 stalks celery finely diced
- 1 scallion, thinly sliced
- 1 tsp. onion powder, or more to taste
- 1/2 tsp. mineral salt
- 1 tsp. mustard (organic)
- 2 Tbsp. Veganaise OR Homemade Mayonnaise
- Optional: 1 cup chopped organic tempeh sautéed in coconut oil
- WRAP - Romaine leaves, nori sheets, coconut wraps

Directions
- Mix everything together and serve immediately or let meld for 1-2 hours.
- Serve on flatbread, crackers or in a wrap (coconut wrap, romaine)
