Ingredients
- 2 sweet potatoes (Japanese or white variety)
- 2 tsp. himalayan salt
- 2 Tbsp. virgin coconut oil
- 1 Tbsp. cinnamon
- 1/4 cup coconut sugar

Directions
- Cut sweet potatoes into 1/2 inch thick strips and put in a large mixing bowl.
- Toss in coconut oil, cinnamon, sugar and salt.
- Spread onto a parchment paper lined baking sheet and bake for 20 mins at 350 degrees
- Then turn up to 400 degrees for 10 mins. Then turn onto broil for 4-5 minutes or until crispy and golden.
- Remove for baking sheet and coat with another tsp. of cinnamon and lakanto or coconut sugar.
- Eat right away! Dip in coconut butter for an extra special treat.
