Ingredients

  • 2 cups zucchini, chopped (green or yellow)
  • 1 1/2 cups tahini
  • 4 cloves garlic, peeled
  • 1/4 cup extra virgin olive oil
  • 1/4 cup lemon juice, or more to taste
  • 1 - 2 tsp mineral salt, or to taste
  • 1 pinch cayenne pepper
  • 1 tsp paprika, regular or smoked
Low Carb Zucchini Hummus

Directions

  1. Blend everything except tahini in a blender until smooth.
  2. Add tahini and blend again until smooth.
  3. Garnish with parsley and paprika.
