Ingredients
- Veggie scraps from onions, celery, zucchini, broccoli stalks, cabbage
- 3-4 cloves garlic, unpeeled
- 3-4 Tbsp. Chopped ginger
- 1-2 tsp. mineral salt
- 1 Tbsp. oil of choice
- 1 bunch of Rosemary, thyme or oregano sprigs

Directions
- In a large stock pot, add all scraps and ingredients. Fill with water, about 3/4 full.
- Bring to a boil, and simmer on low-medium for 1-2 hours.
- Let cool and transfer to large glass jars, label and store in the fridge. Use as liquid in dressings, stews or soups!
